A good thickness of the
knife to aim is 3 mm (0.12 ") .If you do not intend to use the blade to
carve, it can be a little thicker.

When it comes to width,
narrower is better for carving, while a wider blade is better for cutting wood
and other heavy work. The width also extends the life of the blade as it has
more material to polish. Between 1.8 cm and 3 cm (0.7 "and 1.2") is a
good guide. Any broader than that and you are only paying for the extension of

angle between 25 and 30 degrees. The higher angle makes it more durable, while
a lower angle improves your carving skills. The bevel must be straight or
concave. A convex bevel makes it act strange and almost impossible to carve.
Not to mention sharpening. A beveled micro helps the knife stay sharp longer,

Steels come in different
qualities, each with different properties, these properties are:

Hardness, which is measured
on the Rockwell C scale. This is how resistant the steel is to deform.
·
Resistance, is the
flexibility of steel. It opposes hardness in such a way that the harder the
steel, the less difficult it is. Imagine a dry spaghetti versus a cooked
spaghetti. Cooked is tough, can bend and even stretch a little. The dry is
hard. It is rigid and will break with too much force.
·
The wear resistance is the
abrasive wear resistance. That's what happens when you use a sandpaper. The
roughest surface wears out in the smoothest. Harder steel generally has a
higher wear resistance. Imagine sanding the spaghetti.
·
The resistance to corrosion
is the resistance to rust. Stainless steel is an example of material highly
resistant to corrosion. However, if you choose a corrosion resistant material,
you should forgo the finer sharpness on the edge. They are simply not possible
to make as clear as other materials.

The retention of the edge
is the time that the sheet will retain its sharpness. It is the sum of the
above.

As you probably already
thought, it is not possible to make a definitive knife. You will have to think
about what properties you want in your knife.
